good news for everyone.  i have finally got our beloved Organic Honduras back in stock here! our favourite thing about this Honduras is the very low acidity which makes it easy on the stomach, and of course the taste buds too!

process: washed

varietal: catuai

cupping notes: milk chocolate, caramel and honey with pleasant citrus and floral aromas. mild acidity and smooth body

two new varieties to add to shelf! 

-Organic Peru El Gran Mirador, an aromatic mountain coffee produced and processed entirely by women and carefully cultivated under the shade of trees. this is a specialty coffee aimed at the most demanding palates.

-Brazil Pocos de Caldas, a higher elevation brazil with excellent flavour notes. notes of caramel, apple, and citrus in a very clean, sweet cup.

i have a new variety of decaf now as i could not order in the colombia sugar cane. its a honduras swiss water process decaf and is a clean cup with notes of caramel and toasted almond.

the bad news is... i couldn't get the organic cascadia decaf in again because of supply. but there's good news.... i got a columbia sugar cane decaf. now some of you are probably wondering what sugarcane has to do with decaf coffee. its quite fascinating. here's a little article i found on Speedwell Coffee's website.

Sugar cane ethyl acetate (E.A.) processing, also commonly referred to as natural decaffeinated, starts by fermenting molasses derived from sugar cane to create ethanol. This alcohol is then mixed with acetic acid, to create the compound ethyl acetate. 

When the coffee is received it is first submitted to a condition of water and steam.  This elevates the moisture contained and swells the bean in order to facilitate the extraction of caffeine.  It is at this point, that the bean experiences an E.A. wash, which dissolves the caffeine.  The beans are then cleaned with water, followed by steam, to clean the inner most portions of the bean.  Finally, the beans are dried until reaching the moisture similar to which they had prior to the process.

This method avoids excessive heat or pressure, which can radically disrupt a green bean's cellular structure. One downside of this process, is that since the pores of the seed are opened up through steaming, the coffee does tend to age more quickly (both as roasted and green) than our regular offerings.  You may even see the occasional "sweat" on the roasted bean within several days of roast.  In non-decaffeinated coffee, this typically occurs many more days after roast.
